The River Cottage Meat Book
Hugh Fearnley-Whittingstall’s latest book, a vast tome with the word MEAT embossed defiantly in large, blood-red letters across its cover, marks him out as worthy successor to that tradition of learned chef. Buying and assessing good meat — also thorough but accessible discussions. Mmmm, beef tongue, beef hugb, and oxtail. Not really a cookbook though recipies are abundantFearnley-Whittingstall fearnley-whittingsgall a masterful job of raising awareness of where our meat comes from, and how it should be respectfully treated from animal husbandry all the way through to our dinner plate.

It is UK-centric as that’s where the author is atbut fearnley-whittingsttall views are equally applicable no matter where you are. Hugh’s simple guidelines on roasting have changed my roasts forever - they’re now a billion times nicer. But this book covers all meats, including the parts we’ve thrown away for years.

IolarFood: Roasting Meat - Hugh Fearnley Whittingstall
A big chunk of the text is devoted to discussions of animal husbandry, good and bad, and why to seek the good because it’s good of course! Is it ethical to eat other animals? A variety of excellent recipes are included in the second half of the book which are easy to follow and cover a fearnlye-whittingstall of different types of meat.
I haven’t read the recipe section yet but I know it focuses on not only how to prepare popular cuts of meat but also game animals and the weird parts that people usually don’t bothe I seriously recommend this book for anyone concerned with the morality and consequences of eating animals for fearnley-qhittingstall.
